Opening a bakery is one of the most equipment-dense buildouts in foodservice. You're doing a walk-in cooler's worth of dough control, a range's worth of hot work, and a display case's worth of retail merchandising — all at the same time, in a kitchen where the flour never really settles. Miss a piece and the whole flow breaks: no proofer means dough waits on the bench, no rack oven means you're pulling sheet pans one at a time, no baker's bench means your team is laminating on a prep table meant for salads.
We built this checklist from what actually ships out of the USA-RS warehouse to new bakery accounts — planetary mixers, spiral mixers, deck ovens, proofers, sheeters, retarders, and the smaller supporting equipment that makes the room actually function. 1. Mixers: the heart of every bakery
Nothing runs before the mixer runs. For most bakeries, you'll want two: a planetary mixer for icings, batters, and small dough batches, and a spiral dough mixer for the bread program itself. Trying to make artisan bread on a 20-quart planetary works fine until you start running 40-lb dough batches — at which point the motor gets warm, the gluten gets over-mixed from the extra time, and your loaves suffer.
Planetary — sizing by daily output
- 10–20 quart (countertop): icing shop, croissant program under ~50 lb/day, cake decorator. The Hobart HL200-1 Legacy+ 20-Quart Countertop Planetary Mixer from Hobart is the workhorse — 1/2 HP, three fixed speeds, and a #12 hub that accepts everything Hobart makes.

- 60–80 quart (heavy floor): production bakery, pizzeria doing 200+ pies/day. Hobart HL600-1 60-Quart Heavy-Duty Planetary Floor Mixer — the industry-standard floor unit. Every Hobart planetary of the last 30 years is still repairable, which is why they cost what they cost.
🔥 Rule of thumb: Never fill a planetary mixer past 60% of its rated capacity for stiff dough. A "60-quart mixer" is a 36-quart bagel-dough mixer. Motors don't die from overfilling once — they die from a year of it.
Spiral — non-negotiable for a real bread program
The difference between planetary and spiral isn't just the hook shape — the bowl rotates too, and the whole geometry is designed to fold dough instead of thrash it. Less friction, less heat, more gluten structure. If you're baking baguettes, sourdough, ciabatta, or bagels, you need a spiral. Full stop.

2. Ovens: deck, convection, or both
The oven question is really three questions: what are you baking, how much, and what's your ceiling for utility spend. Most bakeries end up with a combination. Here's the rough decision tree:

Deck ovens — the artisan-bread standard
Two brands dominate the shop: Bakers Pride and Blodgett (both now under Middleby). The Bakers Pride Super Deck Series Y-600 is the industry go-to for a 60×36" hearth — one deck cranks out 6 boules or 8 baguettes at a shot, and the FibraMent stone holds heat like a masonry oven. If you're stacking for capacity, look at the Blodgett 951 Double-Section Gas Deck Oven — two 42×32" decks in one footprint, and Blodgett's steam injection is a step above what most pizza-oriented decks offer.
Convection — for everything that doesn't need a stone
For cookies, muffins, laminated pastry, and any sheet-pan-heavy program, a bakery-depth convection oven is faster and more forgiving than a deck. Vulcan's Vulcan VC66ED Electric Double-Deck Bakery Depth Convection Oven is the honest workhorse — bakery-depth means it accepts a full 18×26" sheet pan front-to-back, which convection ovens meant for hotel kitchens do not.

3. Proofers and retarders
Fermentation is what makes bread taste like bread. You can proof in a warm corner of the kitchen for a while, but eventually you'll want dedicated boxes — one for warm proofing and one for cold retarding overnight. A dough proofer/retarder holds a stable temperature and humidity so the dough behaves the same on a January morning as it does in July.
- Half-height cabinet proofer (undercounter or bench): BevLes HPIS-3414 or Serv-Ware's SC1836 line — good starter units for a small bakery-café.
- Full-height single-door proofer: BevLes PICA60-24INS-A-1L1 is a proper retarder-proofer with programmable stages — mix at 8pm, retard overnight, warm-proof for 60 min in the morning, bake at 7am.
- Intermediate rest proofer: JAC Machines MB-L Intermediate Resting Dough Proofer — for shops that divide and pre-round, then need 15–20 minutes of bench rest before final shaping.
📝 Configuration tip: If you're doing anything laminated (croissants, danishes, kouign-amann), get a retarder that holds 38–40°F. Warm-proof holding temperatures (~85°F) will destroy laminated dough — the butter melts, the layers collapse. A dedicated cold retarder is not optional for a viennoiserie program.
4. Dough sheeters and dividers
Once a bakery moves past 40 lb of laminated dough a day, hand-sheeting stops making sense. A commercial dough sheeter gets you consistent thickness, faster throughput, and hands that don't hurt at the end of a shift. 5. Sheet pans, racks, and storage
The unglamorous stuff that makes or breaks the flow. Every bakery needs, at minimum:
- 60–100 aluminum sheet pans (full and half). Buy more than you think — you'll always be short at 4am on Saturday.
- 2–4 bun pan racks on casters. The Channel Manufacturing 18-pan end-load rack or Sapphire 20-Pan End-Loading Aluminum Sheet Pan Rack handle production-bakery abuse.
- A dedicated dough bench — ideally an 18-gauge stainless work table with an undershelf for flour bins. Cheap tables sag under 40 lb of dough being scaled at once.
- Bakery supplies: bench scrapers, banneton baskets, baker's peels, dough dividers, thermometers, portion scales.
6. Refrigeration and retail display
Cold storage in a bakery is different from cold storage in a restaurant. You need flat storage for sheet pans and bun-pan racks — not the deep-shelf configuration of a typical reach-in refrigerator. Either buy a pan-rack-friendly reach-in (roll-in door, no interior shelving to work around), or build a small walk-in cooler sized for full pan racks to roll straight in. On the retail side, a bakery display case — dry or refrigerated depending on whether you're merchandising cream-filled items — is what turns walk-in traffic into ticket average. Pair it with bakery display trays in a consistent size so the case looks intentional instead of thrifted.
Maintenance and lifespan: what to plan for
Bakery equipment lives a hard life — flour dust is abrasive, dough sugar is corrosive, and the room runs hot and humid all day. Buying good equipment is only half the job; keeping it running is the other half. A few realities worth planning for on day one:
- Mixers eat gears if you overload them. Every Hobart planetary comes with a capacity chart on the side of the head — the one that tells you what you can mix at each speed. Speed 1 handles heavy dough, speed 2 handles cake batter, speed 3 handles whipped cream and icing. Running heavy dough at speed 2 or 3 is the fastest way to kill a $12,000 mixer.
- Deck oven stones need to acclimate. Never fire a cold deck oven straight to 500°F — ramp it up over 30–45 minutes to let the stone come up evenly. Thermal shock cracks decks, and replacement stones run several hundred dollars each.
- Sheeter belts wear out. Plan on replacing the fabric belts on a Doyon sheeter every 12–18 months in a busy shop. Order a spare belt when you buy the machine so a Saturday-morning belt failure doesn't shut down the pastry program.
- Proofer humidity sensors get gunked with flour. Wipe them down monthly. A sensor covered in flour paste reads the wrong humidity, and dough proofed at 45% humidity when the display says 85% will skin over and split during the bake.
- Refrigeration coils need cleaning. Every 90 days at a minimum. Flour dust settles on evaporator and condenser coils faster than in any other kitchen environment; a fouled coil is why a "new" reach-in stops holding temperature 18 months in.
Realistic lifespan expectations on properly maintained equipment: Hobart planetary mixers 25–40 years, Univex spirals 15–25 years, Bakers Pride and Blodgett deck ovens 20–30 years, Doyon sheeters 10–15 years, BevLes proofers 8–15 years. The refrigeration in a bakery is usually the shortest-lived — 8–12 years for reach-ins, longer for walk-ins if the mechanical package is kept clean.
Layout notes: sequence the room by workflow
Equipment on a spec sheet is one thing; equipment arranged in a working kitchen is another. A bakery's floor plan should follow the dough — from ingredients through mixing, dividing, shaping, proofing, baking, cooling, and finally to display or packaging. A few layout rules worth internalizing before the plumber sets rough-in:
- Keep the mixer within arm's reach of both the ingredient bins and the water source. Nobody wants to carry 50 lb of flour or a bucket of hot water across the kitchen.
- Put the sheeter, dough divider, and bench in a row so a single baker can work the whole prep station without turning around.
- Proofers go between the bench and the oven — not across the room. A proofed loaf loses 5°F of internal temperature every 30 seconds it's exposed to a room-temperature aisle.
- Landing space next to the oven is non-negotiable. Plan on at least 4 linear feet of stainless bench directly outside the oven for pan staging and loading.
- Cooling racks live away from the oven and away from the front door — you want ambient air, not blast heat or a customer-door draft, on hot loaves.
The small stuff that shows up on day one
Every buildout misses at least one of these. Put them on the PO now:
- Digital scale (0.1 g precision for yeast/salt, 5 g precision for flour) — baking is chemistry.
- Instant-read + probe thermometers, plus a dough thermometer.
- NSF-rated three-compartment sink, prep sink, and hand sink. All bakery layouts get inspected under the same NSF food equipment standards as any other foodservice operation.
- Handwashing signage (state-mandated), sanitizer buckets, dish table with sprayer.
- Ingredient bins on casters — 50-lb flour sacks are heavy, and pouring from the sack is how flour ends up in your motor housing.
- A CO2/O2 plan if you're running a proof retarder plus a gas deck oven in a small footprint — talk to your HVAC contractor about make-up air before you sign the equipment order.
Rough capital order of magnitude
Every bakery is different, but here's a ballpark for the equipment layer — real numbers from what USA-RS ships:
