It is that every repetitive prep minute now needs a defensible return.

New hires should demonstrate safe assembly and shutdown before working at production speed. Plan for sanitation, allergens, and accessories

The wrong conclusion is that every specialized machine should disappear. High-volume dough, meat, slicing, and vegetable programs still reward dedicated equipment. The better conclusion is that low- and medium-volume tasks now face a higher bar before they receive their own footprint, electrical connection, cleaning routine, and maintenance budget.
