Matfer Bourgeat pastry ribbon made of PVC with a 15-micron thickness. The 1-1/2-inch-high ribbon is designed to ease the unmolding of mousses, charlottes, and other cold pastry preparations.
Place the ribbon inside a ring, then remove the ring without heating the sides of the cake. The 1,100-foot roll is delivered with a roll of double-faced tape to help keep the ribbon in place. Not for oven use.
