Five full-size hotel pans, four stainless baskets and a 7.6 gal kettle let you move seamlessly from blanching vegetables to flash-frying proteins, all while an adjustable thermostat (175 – 400 °F) keeps temperatures locked in for consistent results—shift after shift.
