Care & maintenance

  • Re-oil the maple top regularly—daily in high-volume bakeries, weekly in lighter use—to prevent drying or cracking.
  • Clean stainless components with non-chloride detergents and a soft cloth; never use abrasive pads or bleach.
  • Wipe spills promptly and avoid prolonged standing water to protect both wood and metal surfaces.
Important: Selecting the optional factory Varnique finish provides a durable semi-gloss barrier but voids NSF approval. If you require NSF, choose the standard oil finish and follow the recommended conditioning schedule.
