Maintain the maple top with regular applications of John Boos Mystery Oil or an equivalent food-grade mineral oil. A factory-applied clear Varnique finish is available, but note that selecting Varnique voids NSF certification.

Important: Do not soak or pressure-wash the wood top. Clean with a damp cloth and mild soap, then dry immediately. Re-oil as needed to keep the surface sanitary and crack-free.
