Irinox MultiFresh® NEXT LL Excellence Turbo blast chiller/freezer delivers commercial-grade versatility and speed for busy kitchens. This reach-in unit holds up to (14) 18"x26" sheet pans and offers 13 functions—including blast chilling, shock freezing, thawing, proofing, pasteurization and low-temp cooking—with rapid chilling to 37°F in ~90 minutes and shock freezing to 0°F in ~4 hours. Built with 304 stainless steel, USB HACCP, SANIGEN® automatic sanitation, touch-pad controls, temperature probe, R290 refrigerant, ETL & NSF-7 certifications, and climate class 5 performance for ambient temps above 104°F. MultiFresh® NEXT LL Blast Chiller/Shock Freezer, NOT STOCKED/CALL FACTORY (8-10 Week Order Lead Time)- This multi-function configuration includes 13 dedicated functions: Blast Chilling, Shock Freezing, Cold Holding, Frozen Holding, Thawing, Proofing, Regenerating, Chocolate Melting, Pasteurization, Dehydrating, Low-Temperature Cooking and Automatic Chilling, Freezing, Hot Holding (Cook & Hold) and others. reach-in: capacity - (14) 18" x 26" sheet pans, (28) 12" x 20" x 2.5" steam table pans (Table & Sheet Pans NOT included) This performance increases the cooling and freezing capacity by up to 30%, thanks to the use of the 5-speed "EC" Electronic Evaporator Fans, which manage temperatures from -31ºF to +185º F, Scroll compressors and one-speed condenser fan. With climate class 5, it gurantees excellent performance above 104ºF ambient. Rapid Blast Chill capacity yield of 210 lbs. from finished cooked temperature 194°F to 37°F in approximately 90 minutes & Rapid Shock Freeze capacity yield of 210 lbs. from finished cooked temperature 194°F to 0°F in approximately 4 hours. Tests carried out in compliance with IRINOX procedures using 2" thick food products.
