Roll-in design fits 7–9 universal angle racks and delivers up to 1,100 lb rapid chill/freeze capacity (194°F to 37°F ≈90 min; to 0°F ≈4 hrs). Includes 4 standard cycles plus 122 chef-designed programmable cycles, multi-sensor probe, SANIGEN® sanitation, WiFi/USB HACCP data transfer, low-temp cooking and versatile modes (thaw, proof, pasteurize, dehydrate, chocolate melting) with temperatures from 185°F to -40°F.
