Cooking vessel made of AISI 316 stainless steel (30/10 thickness) and perforated basket in AISI 316 stainless steel (15/10 thickness) with electric tilting. Supporting structure in AISI 304 stainless steel (20-30/10 thickness) and outer cover in AISI 304 stainless steel with fine satin finish.
Advanced Heating System
High-efficiency stainless steel tube burners with automatic ignition and a flame control system. Heating is electronically controlled, activating 2°C before the setpoint and interrupting in case of minimum water level.
Automated Cooking Process
Baskets automatically lift and tilt, stopping in a dripping position and are removable for cleaning. Features automatic filling and refilling of water in the vat, along with an overflow device and front 2-inch stainless steel drain cock with an insulating handle.
Intuitive Touch Screen Controls
Electronic control system features a multifunctional 7-inch resistive touch screen with clear messages. Offers two cooking modes (working temperature or min./max. heating), manual and program modes, and the ability to create/edit cooking programs.
Data Management & Programming
USB connection allows for downloading HACCP data, updating software, and loading custom cooking programs. The machine can be interrogated using MODBUS over RS485 serial interface.
Water Management Functions
Automatic vat filling with level maintenance and a starch skimming function to maintain water quality. Delayed cooking settings can be programmed with date, time, and cycle.
Comprehensive Display & Alarms
Displays cooking type, temperature probes, set temperature, and time to end of cycle. Visual alarms for heating operation, insufficient water level (disabling heating), gas absence (signaling and blocking heat), gas control unit reset, and basket lifting (with 10-second notice).
Mobile Chilling Vat (UBAVR48DX)
Constructed with an AISI 316 chilling tank and a removable perforated basket. Features electric basket lifting/lowering and tilting, forced water activation by a dedicated pump, and a 2-inch discharge valve with insulating handle.
Insulated Trolley (UBACC1010)
Entirely made of AISI 304 stainless steel with insulated basins (pressed with rayed edges and a drain with ball wash-out valve). Dimensions are suitable for GN 1/1 h.200 containers and includes a shaped lower shelf, rubber buffers, and four pivoting wheels (two with brakes).
Safety Systems
Equipped with an emergency button and heating interruption feature activated by insufficient water in the vat.
