Cooking vessel made from AISI 316 stainless steel (30/10 thickness) for superior durability and corrosion resistance. Perforated baskets are also AISI 316 stainless steel (15/10 thickness). Supporting structure, balanced lid, and outer cover are AISI 304 stainless steel.
Double Basin Design
Features two separate basins, each with a 64-gallon capacity, allowing for simultaneous or separate cooking and blanching tasks.
Programmable 7-Inch Touch Screen Controls
Intuitive resistive 7-inch touch screen with multifunctional keyboard for electronic control, program creation/editing, temperature and time settings, manual/program modes, and language settings.
Integrated Automatic Cook and Chill System
Includes right and left side mobile chilling vats (UBAVR64DX / UBAVR64SX) and two insulated trolleys (UBACC1010) to create a complete process line, enabling efficient workflow from cooking to chilling.
Automatic Basket Lifting and Tilting
Baskets automatically lift and tilt, even with the lid closed, stopping in a dripping position for convenience. Baskets are also removable for easy cleaning.
Automated Water Management
Features automatic water filling and refilling in the vat, an overflow device, and a system to facilitate starch skimming.
Direct Heating System
Heating is achieved by aluminum casted elements directly in contact with the vessel bottom, precisely controlled by an electronic board with automatic activation and interruption based on water level.
