EMP-300 AR2 is an overturnable spiral arm mixer with a tilting bowl, 370 qt bowl capacity, 2-speed spiral and bowl drive, and a hydraulic lifting device.
It is rated for 350 lb of bread flour and 300 lb of bagel flour. The cutsheet lists corresponding dough capacities of 560 lb and 440 lb, calculated at approximately 65% and 52% hydration.
Two timers provide automatic changeover from low to high speed. Reversible bowl rotation, dual-side discharge at 49–68 in, and a see-through bowl guard with safety interlock support the specified mixing and discharge functions.
