SCX-16 Two-Compartment Convection Steamer
Steam-coil boiler • 16-pan (8 per compartment) • 36" cabinet baseBuilt for high-volume, high-quality results, the Crown SCX-16 combines a heavy-duty steam-coil boiler with two independent cooking compartments—all wrapped in rugged stainless steel. From vegetables and seafood to sous-vide pouches and re-therm trays, the SCX-16 lets you turn out perfectly cooked product batch after batch while keeping operation, cleaning and maintenance remarkably simple.
Why the SCX-16?
- True commercial capacity – Handles up to eight 12" x 20" x 2½" pans per compartment (16 total) or four 4"-deep pans per cavity.
- Steam-coil boiler – Utilises incoming steam (25–45 psi) to generate 9–11 psi of pressureless convection steam—no electric elements to burn out.
- Independent controls – Separate 60-minute electromechanical timer, “Ready” (green) and “Cook” (red) indicator lights, plus end-of-cycle audible buzzer for each compartment.
- Built-in water management – Factory-installed water treatment system, automatic boiler blowdown and split water line extend component life and minimise scale.
- Premium construction – 316 SS one-piece welded liners, 304 SS exterior, all-welded doors with full perimeter gasket and positive-lock latching.
- Operator-friendly – Steam interrupts when a door is opened and resumes automatically when closed; removable pan supports and drip trough speed daily clean-up.
- Floor-mount stability – 6" stainless legs with four adjustable flanged feet bolt securely to the floor for rock-solid loading and unloading.

For maximum reliability, incoming water must not exceed: 60 ppm TDS, 35 ppm hardness, 1.5 ppm chlorine and pH 6.8–7.3. Failure to meet these limits or to replace water-treatment cartridges as required can void the factory warranty.
