For optimal performance and warranty coverage, the steamer requires water with less than 60 PPM total dissolved solids, less than 20 PPM total alkalinity, less than 13 PPM silica, less than 1.5 PPM chlorine, and a pH factor between 6.8 and 7.3. Use of a Crown Water Treatment System is recommended if your water supply does not meet these guidelines.
The controls for the SCX-10-24 require a 115 VAC, 1-Phase, 60 Hz electrical connection, drawing 2 amps per compartment.
The steam coil boiler requires an incoming steam pressure of 25-45 PSI (172-310 kPa) through a 3/4 inch female NPT connection. A pressure reducing valve is necessary if the incoming pressure exceeds 45 PSI.
Each compartment of the SCX-10-24 can hold ten 12" x 20" pans (1" deep) or five 12" x 20" pans (2-1/2" deep).
For enhanced safety and to prevent steam loss, the steam flow to the cooking chamber automatically cuts off when a compartment door is opened during a cycle and reactivates once the door is closed.
