Direct Steam Operation

Requires an incoming nontoxic steam supply at a minimum of 10 psi (69kPa) with a flow of 80 lbs. (36kg) per hour, reduced to a manifold pressure of 7 psi (49kPa) by an internal pressure reducing valve. A cold water supply (25-50 psi) is needed for drain temperature control.

Dual Cooking Compartments

Each compartment is constructed of all-welded type 316 stainless steel, fully insulated, and provided with removable stainless steel pan supports. Each chamber measures 14"W x 10.625"H x 19.875"D and holds up to three 12" x 20" x 2-1/2" deep full-size steam table pans.

Integrated 10 Gallon Kettle

A dedicated 10-gallon kettle is integrated into the modular boiler base, expanding cooking capabilities beyond steaming.

Durable Stainless Steel Construction

The unit features a Type 304 stainless steel exterior with a #4 finish and all-welded Type 316 stainless steel cooking chambers for exceptional durability and corrosion resistance.

Intuitive Controls

Accessible through a fully removable side panel, controls for each compartment include a 60-minute mechanical timer with ready and cooking pilot lights. An audible signal sounds at the end of each cooking cycle.

Door Safety and Convenience

Doors feature a removable inner stainless steel liner, full perimeter gasket seal, one-piece all-welded stainless steel outer shell, and a positive lock and seal mechanism. Steam flow is interrupted when a door is opened during a cooking cycle and reactivated when closed. A stainless steel drip trough collects condensate.

Integrated Faucet and Sink

Includes a deck-mounted faucet valve with a swing nozzle and an integral sink, all with a common drain, for ease of use and cleaning.

Robust Cabinet Base

The cabinet base features a full perimeter painted angle frame, reinforced kettle and boiler mountings, hinged doors with magnetic latches, and four 6" (152 mm) stainless steel legs fitted with adjustable flanged feet for secure floor mounting.
