Carter-Hoffmann CH600 Slow Cook & Hold Cabinet

Roast, hold and serve from a single, compact cabinet. The CH600’s precision heat circulation gently caramelizes the exterior of meats, seals in juices and automatically transitions to holding mode—no ventilation hood or staff intervention required.

Why the CH600?

  • Side-mounted heat ducts with a protected blower fan ensure even heat top-to-bottom for minimal shrinkage and consistent browning.
  • Digital controls let you cook by time or core temperature with the included meat probe  –  then automatically switch to hold.
  • Wide temperature range: Cook 100-325 °F (38-161 °C) | Hold 100-200 °F (38-93 °C).
  • Preheats to 160 °F in about 25 minutes; temperature variation is less than 5 °F cabinet-wide.
  • All-welded, double-wall stainless steel body with 2″ fiberglass insulation for energy-efficient performance and easy cleaning.
  • Removable stainless rack holds (6) 18″ × 26″ trays on 3″ centers; optional wire shelves fit 12″ × 20″ pans.
  • Water pan in the top of the cabinet provides passive humidity to keep product moist during extended holds.
  • (4) 5″ swivel casters—2 locking—plus perimeter bumper for safe, effortless mobility.
