• Variable humidity system with 5 qt. cast water reservoir keeps products moist or dry on demand
• Universal pan supports on 1 ½ in. centers hold:
    • (8) 18 × 26 in. sheet pans
    • (16) 12 × 20 in. steam-table pans
    • (8) 23 × 23 in. donut screens
• Clear Lexan® door (right-hand hinge) with positive-latch handle and full-perimeter gasket
• Removable bottom-mounted heating module for fast, tool-free cleaning and service
• “Cast-in” humidity element prevents burn-out from accidental water spills
