The RMX-6 is a refrigerated cold food drop-in unit designed for remote refrigeration, meaning the compressor, electrical cord, electrical box, and electrical hook-up must be supplied by others. It includes components like a digital thermostat, expansion valve, thermostat bracket, and filter drier to facilitate this setup.
The RMX-6 is designed to hold six standard full-size (12" x 20") food pans, making it suitable for high-volume cold food service.
A counter cut-out opening of 85 1/4" x 24 1/2" is required. For proper air circulation, ensure the operator side of the counter is completely open. If installing in an island counter, provide two 18" x 18" grill openings for intake and exhaust. An additional 24" x 14" opening is recommended to access the remote compressor for maintenance.
For optimal performance, turn the unit on one hour before serving and turn it off after the serving period. All food products should be pre-chilled to 34-35 degrees Fahrenheit before being placed in the unit, and kept at least 3 inches below the top. The unit is not designed for continuous 24/7 operation.
To clean, use soapy warm water and rinse thoroughly. It is crucial to avoid using chloride-based products, steel wool, or abrasive cleaners, as these can damage the pans and may void the warranty. The condenser coil (for the remote compressor) should be cleaned regularly.
