Heavy-Duty Stainless Steel Construction

Top and inner liner are constructed from 18 gauge, type 304 stainless steel, die-stamped with a raised perimeter bead for durability and easy cleaning. The inner liner is one-piece, all welded with 1/4" coved corners.

Efficient Insulation

The pan is fully insulated with high-density fiberglass, 1-3/8" thick on all sides and 1-1/2" thick on the bottom, enclosed by a 22 gauge galvanized steel outer case, ensuring maximum efficiency and energy savings.

Immersion Heating Element

An immersion-type heating element is provided in the bottom of the pan with a perforated stainless steel sheath cover. A thermostat control is included; the element must be submerged in water to operate properly and maintain warranty.

Self-Contained Refrigeration

Features a fully self-contained condensing unit with a hermetically sealed compressor and thermostat control. The system is charged with CFC-free refrigerant and ready to operate, requiring proper ventilation in the counter.

Easy Installation

A factory-applied solid vinyl gasket under the beaded edge forms a seal to the counter top, preventing seepage and making installation quick and simple.

The RM-HP-4 requires a counter cut-out opening of 57-3/4 inches (width) by 24-1/2 inches (depth). Proper air circulation and leveling are also recommended during installation.
First, ensure the master switch is OFF and close the drain valve. Fill the unit with water until the heating element is completely submerged. Turn the selector switch to 'HOT', then turn the master switch ON, and select your desired temperature on the heating thermostat dial. The unit will be ready in approximately 30 minutes after covering with serving pans. Always check water level regularly.
Water must be used and the heating element must be submerged during the heating cycle to prevent damage and avoid voiding the warranty. For cold mode, water is not required in the pan itself for cooling, but the refrigeration system is self-contained.
Turn the master switch to OFF, remove serving pans, and completely drain any hot water. Turn the selector switch to 'COLD' and then the master switch to ON. A safety device will prevent the cold cycle from energizing until the liner temperature is 120 degrees Fahrenheit or below. Select your desired cooling thermostat setting.
Regular cleaning with soapy warm water is essential; never use chloride-based products, steel wool, or abrasive cleaners. The condenser coil should be cleaned regularly, and the heater sheath should be periodically cleaned of lime buildup to prevent overheating. Failure to follow these guidelines will void the warranty.
The unit is designed to accommodate standard 12" x 20" full-size food pans using the included separator channels and pan rails. It can also hold fractional size pans with the use of optional adapter bars.
