Dual Temperature Operation

Transforms from a hot serving unit to a refrigerated cold pan with the flip of a switch, offering versatile menu options. Note: Water must be used for hot mode, and the element must be submerged.

Dual Temperature Operation

Durable Stainless Steel Construction

Top and inner liner are constructed from 18 gauge, type 304 stainless steel with a 3-inch recessed top and coved corners for easy cleaning and durability.

Self-Contained Refrigeration

Equipped with a hermetically sealed compressor and thermostat control, pre-charged with CFC-free refrigerant for immediate operation.

Immersion Heating Element

An immersion type heating element with a perforated stainless steel sheath cover and thermostat control ensures efficient heating when submerged in water.

Energy-Efficient Insulation

The pan is fully insulated with 1-3/8" thick high-density fiberglass on all sides and 1-1/2" thick on the bottom, enclosed in a 22 gauge galvanized steel outer case for maximum efficiency.

Easy Installation

Features a factory-applied vinyl gasket under the beaded edge that forms a seal to the counter top, preventing seepage and simplifying installation.

Integrated Drain System

Includes a 3/4" diameter drain with strainer, 4" copper nipple, and valve for easy water removal and cleaning.

User-Friendly Controls

Pre-wired with a hot/cold selector switch that prevents dual operation, along with independent thermostat controls and pilot lights for each function.

Pan Accommodation

Designed to hold two standard 12" x 20" pans using removable separator channels and pan rails, or fractional size pans with optional adapter bars.

Frequently Asked Questions

To operate in hot mode, turn the master switch to OFF, close the drain valve, fill the unit with hot water until the heating element is completely submerged, turn the selector switch to HOT, turn the master switch to ON, and set the desired temperature on the heating thermostat. Always check water levels every 4 hours during continuous operation to prevent damage to the heating element.
First, turn the master switch to OFF and remove serving pans. Drain the hot water completely, then turn the selector switch to COLD. Turn the master switch to ON. Note that the cold cycle will not energize until the stainless steel liner temperature is at or below 120 degrees Fahrenheit. Finally, select the desired cooling thermostat setting.
The RM-HP-2 unit requires a counter cut-out opening of 30-1/4 inches in width by 24-1/2 inches in depth. The unit is supplied with a vinyl gasket for proper sealing to the counter.
When installing in a counter, it is recommended that the operator side be completely open for air circulation. If this isn't possible, such as in an island counter, provide two grill openings of approximately 18" x 18" for intake and exhaust at opposite ends, with a minimum clearance of 14" at the top, 24" at the back, and 10" at each side of the enclosure.
Always clean the pans with soapy warm water and rinse thoroughly. Do NOT use chloride-based products, steel wool, or abrasive cleaners as these can scar, mark, corrode, and void the warranty. Regularly clean the condenser coil and periodically clean the heater sheath of any lime or built-up material.
