Cooking Modes

- Combination Mode — 212 °F–485 °F (100 °C–252 °C) with automatic humidity control for faster cooking and improved yields.
- Convection Mode — dry heat 85 °F–485 °F (29 °C–252 °C) for baking, roasting and finishing.
- Retherm Mode — gentle bulk or plated reheating 245 °F–320 °F (118 °C–160 °C) with auto steam injection.
- Moisture Injection — add a burst of humidity at any time during convection cooking.
