This oven can hold (7) 18" x 26" full-size sheet pans, (16) 12" x 20" full-size hotel pans (GN 1/1) in two rows deep, or (14) half-size sheet pans.
This combi oven is UL listed for ventless operation for all food items, including fatty raw proteins, and is EPA 202 compliant, often eliminating the need for a traditional kitchen hood. However, it is always recommended to consult local HVAC codes and authorities for compliance.
The oven requires two cold water inlets of drinking quality, each with a 3/4" NPT male connection. One is for treated water with a minimum dynamic pressure of 30 psi and flow rate of 0.26 gpm, and the other for untreated water with the same pressure and a minimum flow rate of 2.64 gpm.
It features a 7-inch programmable touchscreen control, which allows for intuitive operation, precise temperature and humidity adjustments, and easy recipe uploading/downloading via a USB port.
The oven is equipped with an automatic tablet-based cleaning system that includes five fully automated cleaning cycles. It also has a front-accessible and retractable rinse hose for manual cleaning.
