POS Kiosks and AI Orders Are Squeezing the Kitchen: What Operators Need Now

Kiosks, AI phone orders, and payment platforms are flooding kitchens. Here's the gear that keeps up.

Something unusual is happening at the front of the house. In the last week alone, Qu launched an embedded payments platform aimed at unifying transactions and guest data, Loman AI integrated with Toast to automate phone ordering, McDonald's pushed a kiosk update to close a rewards loophole across its US fleet, and Domino's credited third-party delivery aggregators for a bump in order counts. Individually, each is a front-of-house story. Together they are something bigger — and they land squarely on the kitchen line.

The ordering surface has never been wider. Guests can now start a check on a self-order kiosk, an AI voice bot, an aggregator app, a first-party mobile app, or the traditional counter, and the ticket lands on the same kitchen printer or KDS. What the front-of-house tech wave actually looks like right now

Zoom out to the last two weeks and the pattern is hard to miss. Toast, Qu, Loman AI, Palmer Digital Group's new drive-thru order confirmation board, McDonald's system-wide kiosk update, Dave & Buster's kiosk case study, Hungry Howie's DoorDash overhaul — every one of these is an announcement about how the guest gets a ticket into the system. None of them, as far as we've read, come with a matching announcement about how the kitchen is going to plate the food faster.

That's not an oversight. It's what happens when a technology cycle prices in one side of the equation. Kiosks and AI order bots reliably raise average ticket size (McDonald's and Chipotle both disclosed high-single-digit lifts when kiosks fully rolled out), and they smooth peak-time throughput by parallelizing check entry. But the food still comes out of the same range, the same fryer, and the same hot-hold cabinet. If you were staffed and geared for a 60-tickets-an-hour peak and your kiosks push you to 80, the kitchen has three choices: slow the ticket queue (kills the guest experience the kiosks were bought to buy), throw more labor at the line (kills the P&L), or add hot-hold and staging capacity so the line can build ahead.

Almost every operator we talk to picks door number three.

The equipment that shows up in every "we added kiosks" retrofit

We've spent enough time inside kitchens post-kiosk rollout to have a decent list of the gear operators end up buying in the six months after. It's not glamorous, but this is the shopping list.

1. Insulated holding cabinets

The single most common purchase after a POS/kiosk overhaul is a full-height insulated holding cabinet. When the ticket flow gets choppy, cooks stop batching, throughput falls, and food quality drifts. A cabinet the size of a Cres Cor H138 — roughly 22" wide, mobile on casters, humidity-optional — lets the line build one or two full batches ahead of the ticket count and hold them at NSF-safe temperatures without drying out. Kitchens that were fine with a single overhead pass at the pickup window suddenly need to plate three or four bags at a time to keep pickup-shelf turn under a minute. 3. Sandwich, salad, and pizza prep tables — a size class bigger than you thought

Kiosks and AI order bots produce more modifier-heavy tickets. That single change is why operators keep buying refrigerated prep tables a class larger than what the old counter-only ticket mix would justify. If a legacy sandwich shop ran a 48" prep table under a manual counter check, a post-kiosk build almost always specs a 60"–72" mega-top like the True TSSU-72-18-HC so cooks can stage twice the pan count without slowing the line. Budget operators can hit the same footprint with the Atosa MSF8304GR at close to half the price.

4. Landing space at the pickup and drive-thru window

Third-party delivery is the multiplier that hit Domino's Q2 hardest, and every operator who leans into aggregator growth ends up cramped for landing space at the pickup window. Stainless commercial shelving and pickup shelves — even simple wall-mounted wire racks — buy back a foot of counter that a stack of DoorDash bags was eating. This is the cheapest single upgrade on the list and it's the one operators most often skip until a health inspector or a drop-tray incident forces the issue.

5. Pass-through heated displays for order-ahead pickup

Pizza operators who lean on aggregator and app pickup — the Hungry Howie's model — do best with a dedicated pizza holding cabinet in the pass-through position, ideally with humidity control so a boxed pizza can hold ten minutes for a delayed driver without turning into cardboard. What Qu Pay, Loman AI, and the kiosk wave are really telling operators

All three announcements this week share a common thread: they promise to see more of the guest — payment data, voice-order intent, kiosk-selected modifiers — and turn that into personalization and upsells. What none of them promise is that the food will come out any faster.

The "next generation of QSR" series QSR Web has been running the last two weeks makes the same argument from the marketing side: guest data plus personalization plus loyalty is where the industry thinks growth is coming from. That's directionally right. But the operators we hear from say the same thing over and over — the personalization engine works only as fast as the slowest station on the line. Adding another ordering channel without adding hot-hold capacity or an expo runner just moves the queue from the counter to the kitchen printer.

The Interface Systems restaurant security report released this week is a related datapoint. When ticket-to-plate time stretches, the pickup lobby fills up, and the incident-per-shift count rises. Kitchen throughput has always been a customer-experience story; ordering technology just made the connection more visible.

The buyer's take: what to spend on first

Notice the ordering — the ROI-per-dollar is inverted from the sticker price. A pair of strip heat lamps and a pickup shelf under $1,500 will unblock most operators' expo bottleneck faster than the $8,000 cabinet, and it's the one purchase almost every kiosk retrofit should start with.

The KDS question — and why it doesn't solve the throughput problem

One counter we hear when we push this argument is: "we bought a kitchen display system, that's the throughput fix." A KDS is a genuinely good upgrade — no argument. It kills ticket-paper waste, routes items to the right station, and lets you actually measure ticket-to-plate time. What it does not do is add capacity. If you were making 60 sandwiches an hour before the KDS, you make 60 an hour after, just with better visibility into where the queue is stalling.

The visibility itself matters, though — because it usually surfaces the exact station most in need of a hardware upgrade. Every KDS retrofit we've seen ends with the operator saying some version of "we had no idea the salad prep was the bottleneck." Nine times out of ten, the fix is a class larger on the prep table or an insulated cabinet next to the make-line. In that sense, a KDS is the diagnostic that sells the next round of hot-side gear. Which is fine. It's how the industry works.

Why we are watching this

The ordering-tech wave is not going to stop. Restaurant Dive's read on Domino's Q2 delivery growth and QSR Web's ongoing "next generation of QSR" series both point in the same direction: ordering channels will keep proliferating and ticket velocity will keep rising. The operators who buy on the kitchen side ahead of the wave (holding, warming, staging, prep-table capacity) will keep their throughput. The ones who don't will burn labor and quality trying to catch up.

What we would like to see next from the industry: a kiosk vendor announcement that lands with a matching operator-education program on hot-hold and staging capacity. Until that shows up, that's the conversation we'll keep having with every operator who calls us the week after a POS refresh.
