Retard, proof and hold large batches of dough in a single, expandable cabinet that ships through any 36 inch doorway. Doyon’s knock-down retarder/proofer combines precision touchscreen control, automatic humidity and energy-saving construction to deliver flawless results every time.

  • Clearances: 19 in. top, 1 in. sides, 3 in. rear; 10 ft ceiling for service access.
  • Level, non-combustible floor with floor drain (½ in. connection at rear).
  • Water quality must meet Doyon standards; use 50-1530 water filter (recommended).
  • Ships knocked down on two skids for easy entry and reduced freight cost.
