• Finished dough at 55 % absorption: up to 40 lb (18 kg)
• Medium-crust pizza dough (50 % AR): up to 40 lb (18 kg)
• Whole-wheat dough (70 % AR): up to 45 lb (20.5 kg)

Reduce batch size by 10 % when using high-gluten flour or ice water.

Specifications

The #12 hub should not be used while the mixer is running. Capacities are based on 70 °F (21 °C) water and 12 % flour moisture.
