Each oven section holds five 12" x 20" x 2" deep North American hotel pans, or four 12" x 20" x 2-1/2" deep pans, or six half-size sheet pans.
Available modes include hot air, CombiSpeed, steaming, low-temperature steaming, forced steaming, proofing, preheating, cooling, and sous vide cooking.
The unit is available in 208 or 240 VAC, 1-phase or 3-phase, and 50 or 60 Hz. Single-phase units use a NEMA 6-50P plug, while three-phase units use a NEMA 15-30P plug.
The automated CombiWash system uses very low water and detergent consumption and does not require proprietary chemicals.
Each section requires a 3/4" garden hose cold water connection and a 1.57" (40 mm) drain connection, with water pressure of 40 to 50 PSI.
