Built for high-volume kitchens that live on the flat-top, this American Range 72 inch restaurant range combines a heavy-duty, full-width griddle with both convection and standard ovens—all in one rock-solid, stainless-steel platform.   • 1" thick polished steel griddle plate stretches the full 72" cook surface for maximum production capacity.
  • Six 20,000 BTU manual griddle burners (one every 12") deliver instant zone-control and rapid recovery.
  • Left-side 26½" convection oven (30,000 BTU) circulates hot air for faster, more even baking & roasting.
  • Right-side 26½" standard oven (35,000 BTU) handles everything from sheet-pan prep to low-n-slow braise.
  • Two chrome-plated racks supplied with each oven; five rack positions for flexible loading.
  • Oven thermostats adjust from 250 °F – 500 °F and feature 100 % safety gas shut-off.
  • Stainless steel front, sides and 6" deep landing ledge stand up to daily commercial abuse.
  • Choice of rear configuration—6" stub back, 20" high riser, or high-shelf riser—at no extra charge.
